Effects of Chitosan, Mineral Oil, and Soybean Oil Coatings on Internal Quality and Shelf Life of Eggs

|
Effects of coating materials (chitosan, mineral oil and soybean oil) on selected internal quality and shelf life of eggs were evaluated during 5 wk of storage at 25oC. Coating materials significantly affected weight loss, Haugh unit, yolk index, and albumen pH. Weight loss of noncoated and chitosan-coated eggs was 13.66% and 7.71% while that of mineral and oybean oilcoated eggs was 0.58% and 1.03%, respectively, after 5 wk of storage. Shelf life was extended at least 4 wk by mineral oil and soybean oil and almost 3 wk by chitosan longer than observed for noncoated eggs at 25oC. In contrast to chitosan coating, mineral and soybean oil coatings effectively decreased carbon dioxide release through the shell by acting as a gas barrier. Under the present experimental conditions, mineral and soybean oil coatings were found to be more effective than chitosan coating in minimizing weight loss and preserving the albumen and yolk quality of eggs.
